All Things Nutrients

I went gluten-free when I was 11 years old and have not looked back ever since. Going through middle school, high school, and then college being gluten-free was a challenging experience, and I didn't have a lot of people who could relate to what I was going through. It wasn't until I was in college that I started doing a deep dive into the nutrient deficiencies that come with being gluten-free. I had always heard that obviously there were some nutrients I wasn't getting as easily being gluten-free, but I didn't really know what that meant.  When I started my deep dive, I was shocked to learn about the effect this 'diet' I have to be on medically is having and what I was really missing. Below, I've compiled some of my research on common nutrient deficiencies associated with being gluten-free, along with common side effects and foods high in those nutrients. Celia Co mixes alone will never be enough to fill these gaps, but they were created as an easy alternative to address the nutrient gaps we have, one step at a time.

B Vitamins

Wheat, barley, and rye are all major sources of B vitamins (lucky us, our top 3 enemies), and along with that, wheat flour is mandatorily fortified with several B vitamins. Some gluten-free flours, including rice flour, tapioca flour/starch, and potato starch, are fortified but not nearly to the same degree as wheat flour is required to be.

A few consequences of B vitamin deficiency include:

  • Folate (B9):

    • Megaloblastic anemia neural tube defect in pregnancyelevated cardiovascular risk

  • B12

    • Pernicious anemiaperipheral neuropathysubacutre combined degeneration of the spinal cord

  • B1 (Thiamine):

    • fatigue nerve damage

  • B6

    • Depressionconfusiondermatitisweakened immune function
