I went gluten-free when I was 11 years old and have not looked back ever since. Going through middle school, high school, and then college being gluten-free was a challenging experience, and I didn't have a lot of people who could relate to what I was going through. It wasn't until I was in college that I started doing a deep dive into the nutrient deficiencies that come with being gluten-free. I had always heard that obviously there were some nutrients I wasn't getting as easily being gluten-free, but I didn't really know what that meant. When I started my deep dive, I was shocked to learn about the effect this 'diet' I have to be on medically is having and what I was really missing. Below, I've compiled some of my research on common nutrient deficiencies associated with being gluten-free, along with common side effects and foods high in those nutrients. Celia Co mixes alone will never be enough to fill these gaps, but they were created as an easy alternative to address the nutrient gaps we have, one step at a time.
